The western border of the Netherlands being a coastal area, it is no surprise this region is rich in fishing ports. Each day, fish auctions take delivery of huge volumes of fish caught in the North Sea, particularly regular species such as dover sole, turbot, whiting and, of course, herrings. Matjes herrings (young herrings) are a traditional Dutch delicacy in addition to varieties such as shrimps, mussels and oysters.
